My DS who professes not to like any type of vegetable is currently eating these for lunch.
All measurements are approximate as I make it up as I go along.
3 eggs
1 cup SR flour
1 small carrot (grated)
1 small zucchini (grated)
1 mushroom, chopped up small
1/4 cup of grated cheese for the mixture plus extra for on top
Splodge of olive oil or about a dessert spoon full of butter
Salt
Mix it all together then give it a blast with a bamix to make the vegies less obvious.
Spoon it into a muffin tray with some extra cheese on top!
Would work well with left over roasted pumpkin too I reckon.
