View Full Version : Foolproof zucchini slice which even zucchini averse children will eat

We make this a lot at home - my DS who appears to have a pathological reaction to zucchini in any other form requests it regularly and I have overheard him encouraging other like minded souls to try it in the most hilarious ways. DD1 and DS can manage to make it mostly by themselves too.

1 and 1/2 cups of grated zucchini
1/2 cup of oil
1 cup grated carrot
1 cup of self raising flour (we use white wings gluten free with no visible difference to taste, texture or holding togetherness)
1 onioin diced
5 eggs
1 cup of grated cheese (we always add some parmesan to the mix)

1. Combine cheese, carrot, zucchini, onion
2. Add oil and eggs
3. Add flour, salt and pepper to taste
4. Pour into well greased tray or quiche dish
5. Sprinkle pumpkin and/or sunflower seeds on top
6. BAke in moderate oven for 30 or so minutes.

We serve it with brown rice and salad.

Awesome. I wonder if I can get my child who has an egg AND zucch aversion to eat this. I love zucchini slice!

My mum used to make something like this when we were kids, it also involved rice. I think it was my favourite of all her dishes :)
I find yellow zucchini the easiest to slip into dishes un-noticed.

Just back here to say the girls and I made this on Sunday - they did the grating, egg cracking, mixing, measuring oil and flour etc, lots of fun (& learning too!!) and the result was superb!! DH and the girls loved it, we had it with our dinner and yesterday I served some to our friends (3 adults and 6 kids) and it was a huge hit!! Many thanks Kris!!

looks like a yummy recipe, but my DS2 is not averse to zuchini but to eggs! apparently the smell puts him off - he used to love them!

That's almost exactly the same as the one I made last night, except for the carrot. It's very popular here too :D

I have this in the oven right now. I added a bit of finely chopped spinach (coz I have lots of it in the garden) and spring onions instead of onions (because I didn't have any) and it smells delish!

Thanks for this, it was a big hit last night (after the usual carry on from the children of course, they ate it all). I made it in the thermo so there was a lot of guess work involved but it turned out great.

Ooh, think I'll adopt this recipe next time I make zucchini slice - seems like mine always falls apart, but I think it's due to not enough flour perhaps? Or maybe too many 'pieces' (eg. I also add chopped capsicum, spinach and mushroom). Thanks Kris! :)

My slice is a bit different - I don't add any flour or oil but it still holds together. I just grate a couple of zukes and a carrot, dice an onion, chuck in about a cup of corn kernels, some garlic and a cup of grated cheese, then beat up 6 eggs and a bit of milk with oregano and pepper added and pour over the top. It also goes nicely with three eggs and a tub of silken tofu, whizzed up in the blender.

Funny how zukes are da bomb in zucchini slice when kids won't touch them in anything else. A bit like the way B refuses to touch anything containing pumpkin, except pumpkin soup, which she hoovers up :lol

Okay, so I've tried this a few times now. First time DH said it was 'just ok', second time I added bacon and he said he couldn't eat it because there were too many bits in it. :rolleyes

So I mixed up a double batch on the weekend, only kept the same amount of veggies & added (I think) more bacon, and froze them for later. We'll see how we go....
