View Full Version : Kris - your custard recipe?

I accidentally have too much milk and no appropriate receptacles for freezing it in. I've already made a cheese sauce which used up 1 1/2 L, need to make some custard I think! I also have lots of eggs so I'm wondering if you can post up the egg custard recipe you posted in another thread once (can't find it now). Thanks muchly!

2 cups raw milk, 3 eggs, dash vanilla, nutmeg, cinnamon and scant 1/4 cup organic sugar - stick blender till frothy. Pour into dish. Put into water filled pan. Bake till set. Like velvet it was!

The main consumer of yogurt in this house only likes the thick, creamy variety and I have none of the stuff required to make it!
I'm going to give the custard a whirl, thanks.

Custard's in the oven :) I had no cinnamon (other than quills) and no nutmeg but I did have vanilla sugar so should be yummy.

I have yoghurt culture from Green Living Australia, if you want some Ceres. It makes a very thick creamy yoghurt.

What do you make it in mummy2boys? I have no easy-yo or anything like that.

You can put it in an esky with the right temp water all round it, or leave it near the stove, near a heater. There are a few creative ways to manage it.

I have read that putting custard to bake is best done in a bain marie? Creates an even softer, more velvety experience because it cooks very gently. Mmmm. *prods sole laying chicken to create more eggs*

Is that not just a water filled pan?
I liked it but the non-egg lovers of the house weren't impressed :( going to try one on the stove top next time.

Yep, I put the custard mix in its pan into a cake pan third filled with warm water and keep the temp in the oven a little lower than the recipe calls for.

What about the slow cooker then, if it's a really low heat?

I wasn't sure on the temp but I just put it in a baking tray with water in a moderate oven until it looked about right.

I dunno, about 160 in a fan forced oven so I keep ours on about 150.

You're welcome to borrow my EasiYo thingo if you like. It's really just a jar & thermos, but it does make it easy. I'll bring it tomorrow.

Re custard, I made a seriously yummy one the other night, repeated tonight.

1/2 cup sugar (you'd definitely want to use less if you don't like it sweet)
1/4 cup cornflour
3 egg yolks
2 tsp vanilla
2 cups milk

Whisk together, adding milk gradually, cook stirring constantly.

When I made it the first time I used an extra whole egg. Tonight I used 4 yolks. Both times I added about 1/2 cup cream once it was done.

Oh great! I like that recipe, will definitely be giving it a try. Sadly the boys smashed my whole jar of vanilla sugar today! They were making dessert - ice cubes with sprinkles and vanilla sugar of course. Their defence - "but we didn't know it had vanilla in it" - yeah nice try. :lol

I'm going to try this today, but thought of doing them as individual ones in little ramekins, not sure how long they need in the oven, will just keep an eye on them til they set.

Mummy2Boys, the yoghurt turned out perfectly, thankyou! The instructions said add milk powder but I had none so I added extra cream instead and it's very creamy and delish.

My baked custards turned out perfectly!! They were rich velvety and were gobbled up by the whole family, very delish, thanks Kris!!

Will definately make them again, DH has thought of lots of variations to add for extra flavour, he wants me to try crushed caradamon and orange zest!!

Will try making yoghurt next week, just need to get a kitchen thermometer

I have a zester - it sees a lot of use and guess what, I bought organic limes today ;)
