What's the one thing (or 10 :lol) that your kitchen MUST have???
We always have home made chicken stock :D It's great in cous-cous, soup, curry, I cook Spikees pasta in it, and any other number of great yummy yummy uses.
The other thing we always have is stiff bakers flour (and spelt and wholemeanl flour too) , seeds and nuts and organic pop corn.

Hmmm, Massel Chicken Style Stock Powder (vegan) is my cheat-ingredient to make anything delish! :)
Hmm, I dunno, we always keep a stock of the basics like honey, nuts, dried fruit, preserves, etc. Tortillas are becoming a must-have-on-hand item. They keep for ages and can be used for heaps of different stuff.

Olives and sultanas/raisins. My life would be made torturous by the kids without them. ;)

Sure will ;)
um...
I was going to say my blender (it kicks ass) but I see that's not where this thread is going...
Honestly there isn't a particular thing on it's own. I am usually driven to the shops when the fruit is low.

Eggs
Coconut cream
Rice
Nuts
Cheese
Garlic
Canned tomatoes
Vegan worcestershire sauce
Balsamic vinegar
Herbs and spices
onions
Actually the list could go on and on and on...
They always have to be in the pantry/fridge or hell breaks loose.

Absolute must have's are eggs, almond meal and banana, they form the basis of many a meal for my DS! I can usually rummage up something from whatever vegies are available for myself.
Vegan worstershire! I didn't even know that existed! Must look out for it.

Garlic. Onions. Tinned tomatoes. Black peppercorns. These are probably my most frequently-used ingredients. Balsamic vinegar and extra virgin olive oil, just because. And bread. We go through heaps!

YOu can buy Mexican corn flour, called Masa Harina, which is traditonal corn flour ground with lime. I bought some and then went on GAPS PMSL. I found some of the brand Masa Lista, they have it in some Woolies and some ethnic grocery shops. If you google corn tortilla recipes they all call for Masa Harina and the corn flour I got at the HFS just didn't work!

like esp I was going to say an appliance...
... like my food processor but if it's food...
it would have to be:
avocados,
olives,
a bowl full of fruit,
gherkins,
preserved fruits,
homemade sauces & chutneys,
loads of seasonal veges,
lots of different oils and
an array of herbs & spices.
