My mum and I did a cheese making course a couple of years ago, twas lots of fun! It included wine with lunch so the afternoon was a bit of a blur.....

I want to learn how to make fetta cheese, has anyone done so? How does its difficulty rate?

I have done it.. I would rate it on the pretty difficult end of the spectrum. It involves a lot of sterilising, measuring temps and times, and buying the right culture, moulds for the cheese, some mesh to drain it on.. plus about 10L of milk to make a batch. It's an all day thing, you can't really take your eyes off the clock. The best bit is the whey can be made into ricotta really easily, that bit's quite fun!

It sounds like my idea of torture! Watching a 2yr old and making cheese all at the same time :lol

Yeah that was my experience of it too.. definitely would have enjoyed it more if I wasn't trying to keep a toddler's hands out of the sterile gear.
Hmm, oh well, I guess I'll start off with some easier stuff and see how I go. Anastasia introduced me to "yogurt cheese" today which I'd never heard of.

I'd try things like ricotta, cottage cheese and paneer to start with. Much less involved!
