Sticky Date Pudding
elfling
I took some of this over to Gullygirl's house last night and said I'd share the recipe.
170g stoned anc chopped dates
1 level teaspoon bicarb soda
60g soft (!) butter
170g caster sugar
2 eggs
170g SR flour
1/2 teaspoon vanilla essence
Sauce:
200g brown sugar
6 tablespoons thickened cream
115g butter
1/2 teaspoon vanilla essence
*Pour 300mL water over the dates and bring to the boil, then remove from heat. Add bicarb and leave to stand.
*Cream the butter and sugar. Add the eggs and beat well. Carefully fold in the flour, then stir in dates with their liquid and vanilla essence
*Pour into a greased 18cm square cake tin (I use a round one ). Bake at 180 degrees for 30-40 minutes.
Sauce:
Mix the sugar, cram, butter and vanilla in saucepan. Bring to boil and then simmer for 3 minutes. Pour a little over the cooked pudding, then put it back into the oven for a few minutes to allow sauce to soak in and bubble to a golden brown colour. Serve cut into squares with extra sauce.
