I have lentils in the slow cooker now, experimenting with a recipe I made up on the spot :lol It's based on my bolognaise recipe really, just exchanging the meat with lentils,
Italian Lentils
Crushed garlic
1-2 onions, diced
1c red lentils
2c vegetable stock
Tomato paste
2 x 400g tin diced tomatoes
Mushrooms, sliced
Herbs, fresh &/or dried
Salt & pepper
Olive oil
I cooked the garlic and onions in a frying pan until soft, then chucked everything into the slow cooker, gave it a stir and I'll let you know the verdict tonight!
One of my fave lentil recipes is this one I tried recently:
Honey & Soy Baked Lentils
1c dried green/brown lentils
2.5c vegetable stock
2tbs honey
2tbs soy sauce
2tbs olive oil
1 medium brown onion, diced
Crushed ginger to taste
2 big cloves garlic, crushed
Chuck it all into a oven safe dish, bake with the lid on 160*C for 1.5 hours.

My fave, besides my lentil bolognaise, is lentil risotto.
1/3 cup brown lentils
1 onion, diced
curry spices or paste to taste
1 cup Arborio rice
vegetables of choice (I like mushrooms, peas, sweet potato, spinach, etc)
water or stock
1 small can coconut milk
hard boiled eggs (optional)
I boil the lentils first, then make as for a traditional risotto. I add the lentils and some of the cooking liquid about half way through. Add the coconut milk at the end when the rice is still nutty and cook til everything is gloriously creamy. I serve with HB eggs to make it a complete protein, and sweet chilli sauce. Yum yum!

I loove lentils! Here are a couple of mine :)
Red Lentil Soup
2 cups red lentils washed
4 cups water
1 medium onion diced
1 large carrot diced
1 celery stalk thinny diced
1 clove garlic crushed
1/2 tsp mixed herbs
1/2 tsp salt
1 x400g tin chopped tomatos (which I puree in the food processor OR I use the plain tomato cooking sauce OR my own stewed toms)
Place all ingredience in the slow cooker.
Cook on low for 8-10 hours or on high for 4-6 hours.
The soup will be really thick when it is cooked, so I just add more water, tomato cooking sauce and a touch more salt until I get the consistancy I want. It makes heaps, but it freezes ok.
Lentil Patties
2 cups cooked green lentils (or 1 tin of lentils drained)
1 medium onion diced
1 large potato cooked
2 Tsp tomato paste
1 Tsp crunchy peanut butter (optional)
1/2 tsp mixed herbs
Good pinch salt
Bread crumbs
Place all ingredience except the bread crumbs in the food processor and process until smooth. Tip out into large bowl and stir in as many bread crumbs as needed to make a mixture that can be balled into patties. Form into patties and roll in bread crumbs. Pan fry. Should make about 12 patties.
ETA: The lentil patty mix also makes great sausage roll filling. Instead of rolling into patty shapes, shape the patty mix into logs length ways on puff pastry sheets. Fold over the pastry to make sausage rolls. Brush with egg or milk and sprinkle with seasame seeds and bake in the oven.

Oh yum yum yum! It's very tomato-y, and I accidentally left out the mushies, doh, but it's still yummo. We're eating it with garlic bread (homemade bread with ghee & freshly crushed garlic, wrapped in alfoil and baked in the oven).

Thought I'd add my tried and trusted lentil burger recipe.
1c brown lentils
1-2 c finely chopped mushrooms
1 med-large onion, finely chopped
1 large clove garlic, finely chopped
1 tsp curry powder or your own favourite curry spices
2 sl. stale bread
2 eggs
oil
Cook the lentils until tender, drain and cool. Saute the onions in a heavy based frypan, then add the mushrooms, and finally the garlic and curry powder. Chuck the onion mixture into a large bowl and deglaze the pan with a tiny bit of water if it's sticking, or just wipe out. Add as much of the cooked lentils as you want, I often only use about 3/4 of the cooked amount. Toast the bread then cool slightly and whizz in the food processor until you get crumbs. Combine everything in a bowl and stir to combine. Heat the oil and gently fry for about 5-10 minutes each side until they hold together. Serve on buns with cheese, mango chutney and salad.

Oh yum! No ideas from me at this time of the night, unfortunately. ;)
Just popping in to subscribe... I've recently discovered I'm intolerant to both dairy and soy, so lentils are my new best friends! :lol
