View Full Version : Banana & Coconut "ice cream"

400ml coconut cream
2 mashed bananas
1 lime (or lemon)
1 orange
3tbs honey or maple syrup

Mash banana in a container (I use an old 2L ice cream container). Add honey on top of banana, squeeze and add citrus juice then stir. Pour in coconut cream and stir. Freeze.

Interesting... I have my mum's icecream maker here at the moment and have not yet made a (successful) icecream.

We have one of those low RPM juicers (Samson, I think). The mincing attachment is great for turning frozen fruit into yummy ice-cream-ish stuff. I have some frozen coconut cream cubes too ...

Oh I see. :lol I might just keep looking for one on special. I'm in a bulk buy of raw chocolate goodies atm so I intend to use it for making icecream I'm ok with the kids eating. DS thinks icecream only comes in chocolate. :lol

I've got an icecream maker (picked it up at a garage sale - apparently they're no 1 on the most unused/useless present list so they should be easy to find second hand:lol) and have made lots of yummy icecreams in it, but last summer most the time I just made banana icecream in the food processor - the idea is to buy lots of really ripe (and you can get them cheaper when they're really ripe) organic bananas, peel them and chop them up and freeze them and then pop them in the food processor with a little bit of liquid (any kind of milk - cow, soy, coconut etc) and whatever else you might want to add (eg. other frozen fruit, raw cacoa powder, vanilla, cinnamon etc) and whizz it all up until it's a yummy icecream consistency. It tastes great and it's instant (which is an important factor - my kids find it quite challenging to wait for the icecream in the icecream maker!) If we have any extra I freeze it in icepole moulds for later.
