Non-Vegan, Sugar-loaded delights - Banoffi Pie

okay, Banoffi Pie:
first up, it's not vegan. it's not organic. it's absolutely chockers full of fat and sugar.
but sooooooooooooo good.
for the base you can use pie pastry, but I like a biscuit base.
basically, you make a pie base, fill it with dulche de leche, cover with banana slices and top it with coffee whipped cream.
biscuit pie base:
take a packet of biscuits of your choice. technically, you could make your own organic sugar free vegan cookies, but for this one I used a packet of cheap coffee cream sandwich bikkies. we bought a 1.5 kilo tin for about $2 in thailand. you pop the biscuits in the blender and grind them to a powder. then mix in about half a block of melted butter. sure, you could use organic olive oil margarine or ghee or coconut oil. but I used whatever butter they had in the shop. then you press the mixture into a pie pan or springform tin, put it in the fridge.
once the base is set, smear in dulce de leche.
dulce de leche:
take a can of sweetened condensed milk, pop it in a pot of water deep enough to cover the can and boil it for about 3 hours. *be really careful that the water level doesn't get lower than the can or it can explode!* because it takes so long, it's more efficient to make several cans at once; they can be stored forever like anything canned. just mark them so you know it's dulce de leche inside.
once the can is cooled enough to open, you will find a kind of caramelised milk sweet inside.
Putting it all together:
so make the base, fill it with dulce de leche, cover the lot with sliced banana, squeeze a little lemon over the bananas (stops them turning brown, and gives a little sourness to take the edge off the intense sweet). then cover it with whipped cream and put it in the fridge to firm up, ready to enjoy!!!
