Raw Foodie Recipes

Thought I'd start a thread with some of my favourite raw food recipes. We are aspiring raw foodies....but complete cooked food addicts!! lol!
Wild Roquette, Rose Petal, Pear and Walnut Salad
Approx 1 handful of wild roquette per person
1/2 a pear per person ~ finely sliced
1tbs walnut pieces per person
a sprinkling of rose petals ( you can buy rose petals dried in some stores, or us fresh, organic roses from your garden)
Times the above amounts by however many people you're serving. Toss all together in a beautiful salad bowl.
Macadamia 'Mayonaise'
hmmm...it's gone from my mind. I will write it when I can think of it again!!

Hmmmmm..one of my new easy-peasy fave's from Ani Phyo's book:
Sun-dried Tomato No-bean Hommus
2 cups zucchini chopped
2 cloves garlic (or garlic chives if you don't like real garlic)
juice of 1 lemon (about 2 Tb)
1/4 cup plus 1 Tb extra virgin olive oil
1/2 cup unhulled tahini
1 tsp sea or Hymalayan salt
2 Tb parsley leaves chopped
1/3 cup sun-dried tomatoes, chopped
pinch paprika
Blend in food processor or blender..goes a nice shade of pink..nice with some chunky bits of sun-dried tom left in. This recipe makes heaps and it tastes fabulous with raw baby (dutch) carrots, green beans, or on raw nori sheets with avocado and sunflower sprouts. Too Easy!

I make a date and fig jam that's pretty yummy. I love the combination of sweet from the dried fruit and sour from the orange. It keeps a few days in the fridge.
Dried figs
Seeded dates
Freshly squeezed orange juice
Combine and leave overnight. Mince and it's ready! (I use a manual meat mincer.)
